Yeast is a funny little fungus that’s responsible for making all kinds of delicious things, like bread and beer. It’s kind of like the Willy Wonka of the microbial world, turning sugars into alcohol and carbon dioxide through the magic of fermentation. There are over 1,500 species of yeast out there, but the most famous one is probably Saccharomyces cerevisiae, which has been helping humans get their bake and brew on for centuries.
